The same fruit as our clear Williams, but a different path. After distillation, this spirit goes into oak barrels for at least eight years, stored at around 70 percent.

The barrel imparts color, vanilla, and roasted notes, and a portion evaporates over the years. Unusually, the pear remains recognizable despite this. In most barrel-aged spirits, the primary aroma disappears, but not here.

40 percent, 350 milliliters. One of our favorite spirits in the house.

Mindestens acht Jahre, in der Regel acht bis zehn. Eingelagert wird hochprozentig mit rund 70 Prozent, abgefüllt wird mit 40. Die Fässer kaufen wir neu und belegen sie zwei bis drei Mal mit Brand, danach gehen sie an den Essig.

Ja, und das ist bei fassgelagerten Bränden nicht selbstverständlich. Meist überdeckt das Holz das Primäraroma. Hier bleibt die Birne erkennbar, daneben kommen Vanille und Röstnoten dazu.
