What eight years can do to a fire

About 70 percent is stored, and 40 percent is bottled. Over the years, the wood adds notes of toast, caramel, and a hint of vanilla, and the color turns amber. Whatever evaporates in the process, no one gets back.

We buy them new and fill them two to three times with distillate. A good barrel yields more than one filling, though it becomes less expressive with each use. After that, it has not yet served its purpose here: it goes on to vinegar production and continues its work there.

With the three cask strengths, nothing is diluted after maturation. What comes out of the cask goes into the bottle, at over 60 percent. It doesn't get any denser than that.

The wood has a say, but it does not decide.

With most cask-aged brandies, little of the primary aroma remains after a few years; then, what you taste is primarily wood. With the Old Williams, you can still smell the pear after eight years. With the Old Heart Cherry, the cask leads on the nose and the cherry on the palate.

This is only possible if not every brandy is allowed into a cask. The apricot is delicate, the wood is loud, and the wood usually wins. That is why we only take a portion, and the rest remains clear.

Frequently asked questions about barrel-aged fruit brandy
