Der Alte Apfel is the brandy that started our journey into barrel aging. It is distilled from fresh apples, not from stored apple wine.
It is then aged for at least eight years in oak barrels, stored at around 70 percent alcohol. We buy the barrels new and fill them two to three times with brandy, because a good barrel yields more than one filling. Afterwards, they are used for vinegar. The wood adds notes of vanilla, toast, and color, while a portion evaporates over the years.
Bottled at 40 percent, available from 50 milliliters up to a magnum. Golden, mild, smooth, and always a little different over the years.
