Die Challenge beim Essigmachen
Über diesen Essig
Eight years in oak. Before that, the sun had already concentrated the sweetest grapes on the vine. We gently cook down their juice until fruit sugars and aromas are dense, and only then does it become vinegar. It stays at least eight years in one of our roughly 1,400 oak barrels, and while the wood adds structure and time rounds off the edges, a complex vinegar emerges with an acidity that resolves all contrasts. Nature becomes culture.
