Apricots don't wait. Between the day they are fully ripe and the day they are no longer, there is hardly a week. Harvesting takes place in July, and what goes into the mash fresh is what gets distilled.
We work with three varieties: Hungarian Best, Rose Apricot, and Kulmland Apricot. One brings more fragrance, the other more acidity. It is double-distilled in copper stills. No sugar, no artificial flavors, no extracts. What ends up in the glass comes from the fruit.
At 43 percent, there is enough structure to ensure the fruit doesn't blur. An apricot brandy that smells like apricots is not a given. It is the result of patience during harvest and restraint during distillation.
