A barrel-aged spirit gains vanilla, toast, and color from the wood. A clear one gains nothing. What was in the mash is what is in the glass.

Apricots are fully ripe for barely a week. Williams pears harvested too early have no aroma, those harvested too late become mealy. Summer pears in mid-August, elderberries in September, Maschansker apples in October. Anyone who misses the right moment will notice it later in the glass.

That is how much wild pear is needed. For blackberries it is 29 kilos, for raspberries 30. Berry brandies therefore cost more, and there is never much of them anyway.

After distillation, the spirit does not go straight into the bottle. It matures in glass carboys, allowing the aroma and taste to harmonize. We then adjust it to 40 to 43 percent alcohol using soft spring water. It is not sweetened or flavored.

Varieties that hardly anyone else distills

Williams and Marille can be found in every distillery. Things get interesting beyond that. The Saubirne, which spent centuries in the feeding trough. The Hirschbirne, small and stout, from a harsh climate. The Kriecherl, which grows on embankments where no one planted it. The rowan berry, inedible raw.

These varieties yield less juice and are more labor-intensive. But they are hard to find anywhere else, and you'll know why we distill them the moment you get a whiff.

Frequently asked questions about clear fruit brandy
